Ingredients
Ingredients
3 lg eggs
1 cup milk
1 cup Frankie's gluten-free all-purpose flour blend
2 tbsp butter
Yorkshire Pudding Directions
Preheat your own to 375°F or 190°C
Beat the eggs and milk together in a medium bowl. Stir in the flour.
Divide the butter evenly into the cups of a 12-cup muffin tin (roughly 1/2 teaspoon per muffin cup). Place the muffin tin in the preheated oven until the butter has melted and is sizzling hot (about 2-3 minutes). Remove from the oven and distribute the batter evenly among each cup. Return to the oven and bake for minutes then reduce heat to 350°F or 175°C and bake until puffed and golden (about 25 minutes more). Don't peek until you're sure that they're done or you'll let too much heat out of the oven and the puddings will collapse.
Serve warm.
I use Frankie's gluten-free all-purpose flour blend for this recipe because I know that it works so well and I can use it in almost any recipe out there, regardless if the recipe is gluten-free or not. If you'd like to make this recipe just like I did, you can order some at: glutenfreefrankies.com or through Amazon, just search for Frankie's flour.
